There is something special about Avocado and Cucumber-Mint Gazpacho, a soup you don’t need to cook. They are easy, they are simple, and they are delicious. Most importantly, when balanced well, you get the most of the nutrients while having such soup in your “to-go” lunch with no need of re-heating. Handy, no?
Avocados are incredibly healthy. Especially when you are trying to balance your diet and eventually shape the body. Eating one avocado a day with supply you with variety of vitamins, such as vitamin K, C, B5 and B6, folate (also called vitamin B9) and potassium. On top of everything, 100 grams of avocado contains 7 grams of amazing fiber and good amount of healthy fats.

AVOCADO and CUCUMBER-MINT GAZPACHO
Preparation 15 minutes / Cooling 2-3 hours / Serves 2
For VEGAN option – switch Greek yoghurt & water for 1 full cup of coconut milk
1 large cucumber, washed, deseeded and chopped (cut cucumber in half and use a small spoon to deseed easily)
1 medium avocado, chopped
1/2 small chilli pepper
1 spring onion, washed and chopped
150 ml Greek yoghurt
1/2 cup still water
50 grams sweet corn
bunch of fresh mint
1/2 freshly squeezed lime juice
pinch of salt
Blend all ingredients in a food processor (or blender). Chill for at least 2 hours before serving.
