I’m recycling “Baked Beef with Vegetables” post. I posted it last year and since I’ve redesigned my website, all the posts are gone! Nevertheless, I believe it should have a firm spot in my “Bikini Look in 90 days” project as it’s super easy and very, very flavourful.
This is such a healthy, lazy food! I mean it, you need absolutely no cooking skills to achieve such flavour explosion, yet you can be sure this healthy meal won’t compromise your diet plan.
The meat in question can be truly versatile. Sometimes we simply don’t have fillet or rib eye, reasons may vary from the accessibility of the ingredients to the budget. So basically you can use any beef cut you find in your fridge or freezer 😉
Here I cooked with truly cheap beef cut, more precisely with bottom round steak (also called a Swiss steak), ideal for slow cooking – here on the picture it’s no. 7:
BAKED BEEF WITH VEGETABLES
Preparation 10 minutes / Cooking 40 minutes / Serves 2
400 grams of any beef cut “hard to cook”
4 large ripe tomatoes
5-6 any mushrooms – here I used porcini mushrooms
1 large mozzarella
few brunches of rosemary
2 garlic cloves, whole and crushed
3-4 tablespoons olive oil
salt & pepper to taste
few basil leaves to serve with
Preheat the oven to 180ºC (360ºF). Take a shallow frying pan, sprinkle with 1 tablespoon of olive oil and sear your beef cut from both sides along with garlic and rosemary. I didn’t slice garlic, I just crushed it and place it next to the beef. This should take only 2-3 minutes each side.
Use a deeper pan/baking pot, place your beef inside along with garlic and rosemary, chop tomatoes and porcini mushrooms and add them around the beef cut. Top with pieces of mozzarella, sprinkle with olive oil and season with pepper and salt.
Put in the oven and leave in for 40 minutes. That’s all!
After you take the pan out of the oven, sprinkle with few basil leaves and enjoy.
I promise you won’t find a simpler, cleaner and healthier beef recipe 🙂 And the beef… OMG, so soft. Yummy!
