Ingredients
  1. 6 large apples - you can mix them up, I used one tart like granny smith and the remaining sweet ones
  2. 80 grams coconut sugar (you can use any sugar you wish, even vanilla one is delicious)
  3. 2 tbsp cinnamon
  4. 4 tbsp lemon juice
  5. 1 tsp fresh ginger, grated
  6. 2 tbsp cornstarch
  7. 3-4 tbsp water
  8. pinch of salt
  9. ice-cream of your choice - pairs soooooo well with vanilla ice-cream!
Instructions
  1. Preheat the oven to 180C.
  2. Peel the apples and slice them evenly.
  3. Place slices in a baking tray and mix with lemon juice, sugar, cinnamon, ginger, cornstarch, pinch of salt and water.
  4. Cover the tray with tin foil and bake for 45 minutes. After that remove the foil and continue baking for another 10 minutes.
  5. Serve alone or with a scoop of ice-cream!
