Ladies, in case you celebrated last night, certainly your desire to consume something unhealthy is huuuge! Try to enjoy a refreshing beef broth with rice noodles, not only you’ll feel amazingly full after a small bowl, you’ll also increase your liquid intake and pleasantly warm up during long winter evenings without gaining any weight).
BEEF BROTH WITH RICE NOODLES
Preparation 15 minutes / Cooking 2 hours / Serves 6-8
2 medium short ribs (buy in bio quality if you have a chance)
300 gr beef oxtail
1 medium celery root, washed, peeled and cut into small squares
3-4 celery straws, washed and sliced
2 medium carrots, peeled, washed and sliced
2 medium parsley roots, washed, peeled and sliced
1 medium tomato, washed and halved
1 small kohlrabi, washed, peeled and chopped
1/2 leek, washed and sliced
1 medium onion, peeled and chopped into larger pieces
2 garlic cloves, crushed
1 tablespoon whole black pepper
3-4 dried sweet bay leaves
1 chili pepper
bunch of flat-leaf parley, washed
pinch of salt
Place all ingredients in a large pot and fill with water. Allow it to reach a boiling point and once it’ll be boiling for a minute or two, lower the heat and let simmer for at least an hour and a half.
Strain the broth, add (carefully) salt and start preparing the boil for your perfect broth 🙂
To serve 1, you will need:
100 gr rice noodles
1/2 small red onion, thinly sliced
1 spring onion, sliced
coriander or flat-leaf parsley, washed
1/2 lime or lemon
Place rice noodles into a bowl. In a small pot bring water to boil and pour over rice noodles, stirring every 2-3 minutes to make sure they “cook” well. Noodles should be pleasant when you bite, not too hard, not too mushy.
Drain noodles and wash them well under a cold water to clean them off the extra starch and stop their inner “cooking” process.
Pour hot beef broth over your noodles, top with onions and herbs and sprinkle with lime.
Beef broth prepared in such homemade way is a proper meal and will leave you full for a long time.
Just keep in mind the golden rule – Less is more. If you put lot of rice noodles, it will become a heavy dish and achieving your summer body may take longer. Give your brain a chance to realise that you’re not hungry anymore and to send “Hey, you’re full!” signal. Make a pause (after finishing your soup) before taking another portion, your body will thank you 🙂
