Could you imagine baking the most delicious brownie-style Chocolate Cinnamon Cake in under 1 hour? No no no, I’m not teasing.
There are possibly over half a million chocolate cake recipes out there. It’s one of the most popular type of dessert since the dawn of humanity and most of those recipes are absolutely stunning. But how about a super rich chocolate cake with a pinch of cinnamon that is lactose-free?? Yeeeah…yummy.
This is NOT a low cal, low fat desert… This is an extraordinary explosion of rich tastes in your mouth that’ll bring you to a whole new level of chocolate ecstasy.
Believe me, once you bake this brownie cake once, you’ll fall in love with its simplicity and you’ll bake it every Sunday…
CHOCOLATE CINNAMON CAKE
15 min preparation / 45 mins baking / 12 pieces
400 grams dark 60% chocolate
250 ml lactose-free coconut baking cream
200 grams brown sugar
350 grams vegetable fat (I baked this cake also with coconut oil instead but it turned out way too dense)
8 free range eggs
powder cacao, powder cinnamon and powder sugar to sprinkle on top
fresh mint for decoration
Pre-heat the oven on 180°C (350°F).
Put chocolate, lactose-free coconut baking cream, brown sugar and vegetable fat into a large pot and melt everything together on a very small fire. On the side, take a baking form and “butter” it a bit with the vegetable fat or coconut oil.
Once the chocolate cream is completely melted, add cinnamon and let it cool off a bit..
In a separate bowl beat 8 free range eggs and mix the cream with eggs, slowly pouring everything into the baking form.
Put the form in the oven and bake for 45-50 minutes on 180°C (350°F), leaving the cake to rest for 2 hours once it’s baked. Sprinkle with powder cacao, powder cinnamon and powder sugar adding few mint leaves for decoration.
