Seafood is amazingly versatile. Spending most of my childhood on an island I was getting used to fish and seafood straight from the sea, nowadays, living far from the ocean, I try to reach for the only freshest of ingredients. It might not be always easy, however it is certainly worth it.
Shrimps are absolutely my favourite seafood. When prepared right, they are madly delicious and soft. Try the easiest recipe of all – Grilled Shrimps with Mango-Cilantro Sauce. This recipe is incredibly easy due to number of ingredients and its execution.
GRILLED SHRIMPS WITH MANGO-CILANTRO SAUCE
Preparation 10 minutes / Grilling (cooking) 5-6 minutes / Serves 2
- 12-14 medium sized shrimps
- 2 tablespoons olive oil
- salt & pepper to taste
- 1 ripe mango
- handful fresh cilantro
- 1 tablespoon olive oil
- 1/2 freshly squeezed lime juice
- 1/2 red hot chilli pepper
Wash and clean shrimps properly. You can remove also the shell from the body, I prefer keeping it on because shrimps do not dry out fast when grilling. Pierce each shrimp with a bamboo stick (skewer) so that you can grill them easier (and they also look prettier on a mini bamboo stick 😉 )
Heat up your grill or grill pan and once it’s sizzling hot, add olive oil and then carefully place shrimps on the railings. Decrease the heat a little bit. While they are cooking, cut mango in half, remove the pit and peel and place it with cilantro, lime juice, olive oil and red hot chilli pepper into the blender. Blend for 2-3 minutes and set aside.
After 3 minutes flip shrimps and let the other side cook for the same amount of time. Once shrimps are grilled, remove from the grill and season with salt & pepper. Add mango sauce and serve! Easy, isn’t it? 🙂
