Fresh salads shouldn’t be overlooked during winter days. We do tend to crave more carb-satisfying dishes, however try incorporating Fresh Lentil Salad with Feta in your diet as lentils themselves have plenty healthy carbohydrates and on top of everything, lentils keep our bodies in shape.
Rich in carbohydrates, fiber and protein, lentils help us reduce bad blood cholesterol, they are rich in folate, iron and magnesium and they are a great helper during our weight-loss journey. They provide us with necessary energy while stabilising blood sugar , therefore once you start consuming lentils on a regular basis, rarely you’ll experience sugar crushes and energy ups and downs.
FRESH LENTIL SALAD
Preparation 10 minutes / Cooking 15-20 minutes / Serves 2
- 250 grams yellow lentils
- 100 ml Greek yoghurt
- 50 grams Feta cheese, crumbed
- 8-10 cherry tomatoes, washed and halved
- 1 medium onion, peeled and thinly sliced
- freshly squeezed juice from 1 lime
- handful mint, washed and chopped
- handful flat-leaf parsley, washed and chopped
- pinch of salt
In a large pot wash the lentils and fill the pot with water (ideally, for each cup of lentils use 3 cups of water). Bring the water with lentils to boil and then lower the heat to simmer. Let it cook for at least 15 minutes or until the lentils are cooked well. Yellow and red lentils in general require 20 minutes cooking time, green ones around 30 minutes.
Once cooked, remove excess water and let cool off.
In the meanwhile mix your Greek yoghurt with feta cheese and set aside. Chop cherry tomatoes, slice thinly onion and gently chop both herbs, flat-leaf parsley and mint. I’m sure you’ll love the perfect combination of fragrances coming out of this classic herb combo. Mix well with lime juice and salt. Add lentils and yoghurt “dip”, mix once more and enjoy!
